The people we collaborate with are unique—artisans, farmers, and producers—because what they provide us can’t be mass-produced. We strive to create something special, something meaningful, something that reflects our ideals.

The stories of our grandmothers take us back to a past—not so distant—where knowledge was simpler, yet the result of passed-down gestures gifted something truly UNIQUE. Words can only describe and help you imagine it, even if this is increasingly rare nowadays.

Today, science has helped us understand what’s happening, yet sometimes it distances us from what we call “AUTHENTIC.” Our mission is to seek those products that reconnect us with the past, while also harnessing today’s knowledge to explore infinite new methods and approaches.

UNIQUE means something else to us: it means constructing and basing a dish around a single ingredient. We do this to honor it, to extract its true essence. Product authenticity and technique thus come together in harmony.
